I have become a big fan of Hungary with the recent political events in Eastern Europe. I love that the country is pro-Hungarian citizen and is trying to protect them. Since western Europe is completely unsafe to travel to, I am planning a big trip to Hungary. This book offers a great overview of the country and its people. The knowledge of George Lang is fantastic and to anyone wanting to try a new cuisine this book won't disappoint.

Bought this for my neice for a Christmas present . I have a copy of it myself and love it . I bought my copy back in the 80s and never grown tired of it . Part cookbook , part history book , this book has much more than recipes . It's an impressive work . Totally engaging , it will be a book you'll find yourself referring not only for recipes but nuggets of information on Hungarian and European history .

If you're at all into Hungarian cuisine, George Lang is an essential. If you don't think you're particularly interested in Hungarian food (and believe me you are missing A LOT) -- this is a great book to get just for the desserts, and specifically the cakes. I've baked many of them and they are to die for. Your guests will not stop talking.This is slow food as it was meant to be. Same for the baking. Wholesome ingredients, hearty food, light fresh pastry. All are easily made as organic as well. It's also worth noting that the Hungarian stews (goulashes, paprikash, etc.) are extremely well-suited for a crockpot and freeze well. Just make sure you use good authentic paprika as your base.

This is a great addition to my cookbook collection. When we were in Budapest, we had dinner at the Lang restaurant and it was great. These recipes bring back memories of eating at my grandmother's house when I was a child.

I got this book for my friend who is part Hungarian and he really loved it! He not only liked the recipes, but he loves all the neat little facts and such about Hungary!

My husband is of Hungarian descent and has taken an interest in finding recipes like his grandmother made for him as a child. This was a Christmas present to him and he loves it!

I so missed my old, original Lang Cuisine, lost to a fire. Imagine my delight to find one on Amazon! I purchased the 'used' book because of price, and hoped for the best; could not be more pleased!Koalabug

Fantastic book both in style and content. We have already tried a half dozen recipes (and put on a kilo or two). All other Hungarian cookbooks written in English merely borrow from this benchmark.

Onwuachi focuses largely on his culture and the role it plays in his professional life, explaining that he is typically asked to cook either southern comfort food (he's from the Bronx) or African cuisine (his heritage is Nigerian, though he was asked to cook a meal from Senegal because "You know, it's Africa"), but his passion is fine-dining. He shares experiences working in a variety of cooking environments--catering, the galley of a Deepwater Horizon cleanup ship, Mexican restaurants, Per Se and Eleven Madison Park, culminating in his own restaurant, the Shaw Bijou in DC--and provides a personal look at what he experienced in each of those environments.But Onwuachi's focus throughout is on his race, his experiences growing up, and how those continue to influence his life. His parents divorced when he was young, his father was (is) physically and emotionally abusive, he was a troublemaker in school (resulting in his being sent to live with his grandfather in Nigeria for two years), and he became a drug-dealer who was expelled from college. Onwuachi tells his story matter-of-factly, without excuses or pulls for sympathy, allowing the reader a glimpse of the challenges he faced. When Onwuachi has his wake-up moment--watching Obama's inauguration after a night-long bender--he then shows how his experiences to that time helped him successfully matriculate from the CIA while owning his own catering business (largely funded by selling candy bars instead of drugs), work his way up the chef ladder while confronting implicit racism, and eventually open his own restaurant. He shows why this restaurant failed after only three months (to the delight of much of the DC restaurant community), and the story is unfair and heart-breaking to the reader despite Onwuachi not asking for our pity.While Onwuachi's story is fascinating, the writing itself is workmanlike: clear, direct, easy to follow, but without a strong voice or sense of style. Despite his youth (the entire story happens before he turns 30), there's so much here I wanted to learn more about: trying to attend a private school when your home life is chaotic and falling apart, living in Nigeria when all you've known is the Bronx, successfully passing challenging courses at the CIA while simultaneously running a business and working on the side, and so on. The apparently-required recipes after each chapter reflect this dynamic of sharing some but not enough: they're basic examples of dishes related to the chapters that preceded them, with little evidence of what Onwuachi would do to elevate them.In summary, Onwuachi shares a glimpse of his rich and dramatic experiences and demonstrates that we can learn from--and overcome--the most challenging circumstances in our lives. Highly recommended (even if you're not a fan of chef memoirs).

Overall this was a good read, and worth your time if you love food and its preparation. I think the overall reason I gave this three stars, though, is because it feels like the full story hasn't been written. Most people wait until their later seasons in life when they can look back at the journey and have it all make sense, whereas this book left me feeling unfinished.I'd recommend this to readers who've felt pushed down or ignored all their lives despite their talent and abilities. It takes a drive like Kwame's to get past people's obstacles of seeing who you really are, of seeing how you can be a strong asset to a team and a family and a great leader. In the end, you just have to swallow your disappointment and try again. And again. And again. And that attitude has not let him down.Big shout-out to Kwame's mother too -- what an amazing woman!

Fascinating reading, but I love trying the recipes -- and this one was a triumph for this mid-level cook with some training at the Culinary Institute of America -- three one week courses to be precise.Bastilla by Executive Chef/Owner Kwame Onwuachi of The Shaw Bijou in Washington, DC.Serves 4 people INGREDIENTS3 pounds Australian Lamb Shoulder, debonedSalt to taste1 cup + 4 tablespoons Ras el hanout4 + extra for frying tablespoons canola oil3 Yellow onions, diced1 head Garlic, minced2 cups Leeks, sliced1 tablespoon Tomato Paste1 ½ gallons Chicken Stock3 tablespoons Coconut Sugar4 inches Feuilles de brik, 2 x 5 inches1 cup Egg wash2 tablespoons Button Mushrooms, dehydrated2 tablespoons powdered Sugar DIRECTIONS1. Season lamb aggressively with salt and one cup Ras el Hanout.2. In a large pot on high heat, add canola oil. Add lamb and sear on all sides until dark brown, about two minutes per side. Remove lamb and set aside. Next, add onions, garlic, leeks and sauté until translucent, about 5 minutes. Add 4 tablespoons of Ras el Hanout and tomato paste. Mix until combined and cook until the tomato paste has a dark rusty color, about 5 minutes. Place lamb back in pan. Cover with chicken stock and turn heat low. Simmer for 3 hours, covered.3. Remove lamb and shred it. Reserve two cups of shredded lamb. Place the rest in the fridge.4. Strain the braising liquid into a bowl and place back in the pot. Add coconut sugar and reduce on medium-high heat until the liquid is syrupy, about 5 minutes. Set aside.5. Place the shredded lamb in a half hotel pan and place another half hotel pan on top. Weigh it down and place in the refrigerator for one day.6. Heat oven to 400 degrees Fahrenheit. Remove the lamb from the pan by flipping it over. Portion into one and a half inch by 4 inch pieces. Season with salt. Place in a large, oven-safe sauté pan on high heat. Sear until crispy on one side, about 5 minutes. Place in oven and warm through, about 10 minutes.7. Wrap the feuilles de brick around a metal tube and seal the edges with egg wash. Fill a large pot one quarter full with oil. Place on high heat until oil reaches temperature of 350 degrees Fahrenheit. Add wrapped fueilles de brick and fry until crispy, about 5 minutes. In a large pot over high heat. Let cool and remove metal tube. Stuff with shredded lamb.TO ASSEMBLEPlace seared piece of lamb on the plate and place the pastry next to it. Place a spoonful of the braising liquid next to the lamb. Gaston Dorren’s description of various features of the world’s twenty most spoken languages is anything but babbling. Although the book does not have a consistent theme, Dorren blends biographical, historical, and cultural material along with morphological descriptions of languages into something like a delicious cheesecake. There are no earth-shattering theses or discoveries, but the sparkling text and original material make the subject matter interesting, even for non-linguaphiles.For example, one can learn facts as various as the history of the Indian subcontinent and how it shaped Hindi/Urdu/Bengali as well as that Chinese characters are often joined together as syllables to make words. Dorren further explains why Portuguese and not Dutch is one of the world’s major languages and why learning German is so difficult for English speakers—though they were the same language some twelve hundred years ago.Throughout the text is marked by a welcome cosmopolitan approach to cultures and history. Dorren does not fall for the mistake of assuming that European culture has increasingly dominated the world and so the histories of non-European peoples before contact with Westerners are of little interest. Instead, the interaction between Aryans and Dravidians, the spread of Malay and the separation between Japan and China are all discussed. For someone who received a strongly Westernized approach to modern history in school, the lack of an overriding narrative was not fog-inducing but more like fresh air.I wouldn't say that everybody should read this book or that the book contains something that is going to be culturally transformative but if one is looking for something relatively light that still goes beyond pop-culture this is an excellent choice. With the holiday season upon us, Babel is an ideal gift for polyglots or merely just aspiring ones. A pleasant read all around.

My family loves languages and I was excited to find a book on this topic. The statistics about languages in the world are especially interesting and help to provide you with a better perspective on the languages you know, or want to learn. Many of the stories about the individual languages I had never heard before and were fascinating. However, I do think that the author needs a rethink on the way he organized the information. More than a survey on each language, with basic information shared on each one, this book gives you select, interesting facts about each language. Each chapter presents a language and sometimes he tells you about the grammar quirks, sometimes what it's like to learn the language, sometimes the history of the language, and sometimes how the language compares to others. But, there is no consistency from chapter to chapter. I recommend a rewrite using all the information he has, but fleshing out each language fully so you know all of these characteristics of it, and not just selected ones. I wanted to have my 15 year old read the book because she loves languages, but decided not to because of the organization of it.

The first chapter (each chapter covers a language) was quite interesting. The 2nd chapter started to blur into what I'd read in the 1st. I didn't finish the 3rd. Maybe I'm not cut out to be a linguist, lol.

A curious mix of easy to understand / interesting facts and rather laborious academic analyses. Not the light and fascinating read that reviewers indicated. Still, as a person interested in languages I did learn quite a bit. I was disappointed that it addressed mostly spoken language, while I was curious about how they are written.

The descriptions of the languages were boring and/or difficult to understand.

Books about English language, such as those by John McWhorter and David Crystal are some of my favorites, and I also like the deep dive into other languages, such as the books about French and Spanish by Julie Barlow and Jean-Benoit Nadeau. Then there's the books that dip a toe into many languages, such as this one by Gaston Dorren. Babel looks at the twenty languages that are spoken by the greatest number of people in the world. Dorren starts with some statistics to get you grounded, how many native speakers, where spoken, etc., and then takes off on whatever interests him most about that language. He discusses his difficulties in learning to speak Vietnamese, talks about how Japanese is spoken differently by men and women, looks at the history of the written Turkish language and how politics is inextricably linked to its development. It's just fascinating and it touches on many topics. Even if you aren't interested in 20th century Turkish politics (but you might be surprised to find that it is quite interesting), for instance, you might very well find yourself captivated by the astonishing number of words in English that derive from Arabic.(Thanks to Atlantic Monthly Press and NetGalley for a digital review copy.)

This book should be on every engineering students'desk or shelf. Fantastic book with easy to read language. Given thermodynamics' intricacies nestled in that FUNDAMENTAL CONSERVATION equations may not be derived, this book serves as a great main textbook or a supplement.The copy of the book I received is as described. The previous owner also left his bookmarks in. It is interesting to note, and perhaps obvious that most people focus on certain concepts quite uniformly world over! :)

The first time I learned Thermodynamics was 23 years ago; I recently read this book to help a first time learner of Themodynamics and found this book is far more superb than the book I had many years ago. Perhaps, the compliment does not say anything. I found this book is easy to read; I like authors give outline of the chapter - what will be discuss and why, and ties the current chapter with previous chapters so that, as a reader, I can solidify my understanding. I found this book has all those ingredients. Also the book has a lot of examples. I also like that the author takes effort to divide problems into different categories: the concept questions versus exercises versus challenging problems.Being quite satisfied with the book, I also sympathize with many readers who thinks they don't learn thermodynamics from the book. Thermodynamics is quite a difficult subject to learn; although the author has stressed that he believes in a systematic way to solve thermodynamics problems and he had make effort to include the 'process' of problem solving. I wonder if the author would take a step further to include "active thinking"-- reading a problem students should be thinking of characteristics of the problem. By helping a student who first learn thermodynamics, I realize that students have different approaches to a problem, and some of the approaches are not correct due to violation of the laws. I wonder if the author would want to include "other wrong" or "not preferred" solutions. By contrasting the "right way" and the "wrong way" or "not preferred" can be a great teaching tool.

The book I needed to study thermodynamics. This book has good explanations, example problems with solution and over several problems to pratice on. The tables are well organized...great book for thermo 1 & 2

This book and the one by Moran and Shapiro are the better of the Engineering Thermodynamics textbooks. Actually Moran and Shapiro's is the best. I have also used Cengal. I found it a useful reference.

The book is in great condition considering the price. Nice book for thermo!
